Mouthwatering Low Carb Chicken Quiche!  – Fitness Club


I’m crazy about quiches and I make them often, making up with what I have in the fridge and the flours I always have in the pantry. This time there was a classic of traditional cuisine, a low carb chicken quiche with hearts of palm, olives and catupiry cheese and I tell you … It was amazing!

It’s that super classic recipe, which is perfect to serve when you come home to visit, to take a lunch at someone’s house or even for those who make food to sell. Ah, if you had a quiche like that in cafes out there …

You can also prepare, portion and freeze… Although, delicious as this recipe is, I find it very difficult to keep!

Let’s go to the recipe:

Low Carb Chicken Quiche – Recipe



  • 1 and ½ cup of oilseed flour (in this recipe I used a cup of almonds and ½ of cashews)
  • 2 tablespoons of butter cut into small cubes
  • Salt and black pepper to taste


  • 2 finely chopped garlic cloves
  • 300 gr of chicken breast roasted in small cubes
  • 1 shallow tablespoon of tomato extract
  • 5 eggs
  • 1 box of traditional sour cream
  • 3 tablespoons of chopped green olives
  • 3 tablespoons of diced heart of palm
  • 150 gr of grated mozzarella cheese in the thick drain
  • Fresh oregano and thyme to taste
  • Black pepper and salt to taste
  • Catupiry and grated parmesan to taste for gratin
  • Sauté olive oil

Step by step

In a bowl prepare the dough by hand adding the flour to the butter until smooth. The texture needs to be soft but not sticking to the fingers, if necessary adjust the texture with more flour.

Open the dough in a removable form with a removable bottom (the one I use is 27 cm in diameter)

Pre-bake the dough in a preheated oven for 10 minutes at 160-180 degrees (put on the timer to avoid losing your flour, and keep an eye on it!). When switching off, remove the dough from the oven and set aside

In a pan heat oil and fry until the garlic cloves almost brown

Add the roasted chicken cubes and the tomato extract, sauté

Add the heart of palm, the olives, sauté and turn off, reserving until warm

In a bowl beat the 5 eggs with the cream and the grated mozzarella cheese

Mix the cream with the chicken filling already warm and incorporate well

Add the mixture to the pre-baked dough and finish with drops of catupiry and grated parmesan

Bake for another 25 minutes at 200 degrees

This low carb chicken quiche is too delicious served with green leafy salad!

Which flours can I substitute for?

You can replace the total amount of flour in the recipe with other oilseed flours such as peanuts or walnuts.

How much of low carb chicken quiche I can eat?

In low carb there is no recommended amount for each recipe or food, but a daily quota of total carbohydrates in grams, keeping the quota you will have a result.

I don’t calculate how much carbohydrate you give for each portion or in the total of the recipe, but you can simulate that with any adjustments you make to the recipe using a free carbohydrate counting tool like FatSecret.

I haven’t counted carbs since my second or third week of low carb several years ago, just like the same things until satiety with full autonomy.
