Low Carb Blackberry Cake (With Delicious Creamy Filling!) – Fitness Club


Red fruits (blackberries, blueberries, raspberries, strawberries) are low carb and very nutritious, but they are expensive and not very easy to find … When I find something with a good price, I take advantage! This week I found frozen blackberries and turned it into a sensational low carb blackberry cake, ordinary creamy filling Amazing!

It is that perfect recipe for the weekend, because it has a very refined way, great for impressing home people with your healthy eating style.

Recipe – Low carb blackberry cake

Dough Ingredients

  • 1 and ½ cup almond flour
  • 2 tablespoons of coconut flour
  • ½ cup of sweetener (I used erythritol)
  • 3 eggs
  • 2 tablespoons of melted butter
  • 2 tablespoons sour cream
  • 1 tablespoon of baking powder
  • 1 teaspoon of vanilla essence

Filling Ingredients

  • 100 gr of frozen blackberries
  • ½ cup of sweetener (I used erythritol)
  • 1 this
  • 1 jar of traditional cream cheese 150 gr
  • 1 teaspoon of vanilla essence
  • 2 tablespoons unsalted dry grated coconut for sprinkling

Step by step Blackberry Low Carb Cake

With an electric mixer or whisk, beat the melted butter with the sweetener

Add the eggs one by one, the cream and the vanilla essence and beat until incorporated.

Gradually add the almond and coconut flours and incorporate well

In another bowl, prepare the filling by beating the cream cheese with the sweetener, the egg and the vanilla essence

Grease a baking dish (I used a 27 cm diameter round) with butter and distribute ⅔ of the dough

Add the cream cheese cream and distribute the chopped blackberries on top

With a spoon, distribute the leftover dough in small portions on top of the cream

Finish with sugar-free grated dry coconut

Bake in preheated oven for 35 minutes or until golden brown

Before removing a toothpick in the center to see if it is well baked

Let it warm and then rest in the refrigerator for 1 hour before serving

Which flours can I substitute for?

The oilseeds are interchangeable, the coconut oil I would not substitute or make the cake with 100% oilseed flour.

How to replace the blackberry?
